Grape: 100% Xarel·lo
Harvest: 2017, 13th of September.
Viticulture: Grapes from old single vineyard located in a very calcareous soil.
Organic farming. Following also biodynamic principles.
Grapes are selected and handpicked at the vineyard.
Elaboration: The grapes are handpicked with a good state of maturation of the skin (without astringency) in order to avoid the vegetal and phenolic part of the grape. Moreover, we get good content of sugars which is well- balanced with its different acids.
Grapes are collected in boxes and they are placed in a cooling room, to get their temperature down. The day after, some part of the grapes are destemmed and skin maceration is done for several days so to get all the aromatic precursors found on the skin. Once the fermentation has finished, the wine will be for 5 months with the contact of its fine lees to get complexity and structure.
Thanks to its delicate elaboration, we work with low amounts of sulfites. In this way, the wine can express itself without limits.
Appearance: pale yellow, clean and bright.
Nose: Very intense with an explosion of different primary notes, floral and fruit flavors. Green, white and tropical fruit emerges (such as peach, pear, pineapple) combined with menthol and balsamic tones.
Palate: Very good balance in all its way through the mouth with different textures that denote the complexity of the product. Primary notes, such as green and white fruit quickly give way to a structured, fine and elegant mouth to end with a long mineral aftertaste with very soft saline notes that leave the mouth very fresh.
Pairing: It is a very versatile wine. On the one hand, we find these primary notes as green and white fruit, both in the nose and at the beginning of the mouth, which makes it an ideal product for an appetizer or just enjoying without food.
On the other hand, the complex and elegant mouth with a soft and mineral end pairs with different kinds of fish, from seafood, to baked fish or paella. Light meats and semi-cured cheeses are also a very good option.
Service temperature: from 8 to 11 degrees.
